Mini Competitor

My daughter is so darn cute! She's taking the competition very seriously! She practices her poses and her "T walk" with me and she's always asking me tons of questions about the competition. More importantly, she sees that I'm making healthy choices and that I enjoy exercising and be fit! YAY!!!

Recipes

Oatmeal Pancakes

4 Eggs
2c Old Fashioned Oatmeal (dry)
1 16 oz container of No Salt Added Cottage Cheese

Mix all ingredients in a blender
Pour onto griddle and cook like regular pancakes, browing each side until cooked all the way through

Makes 8 pancakes.
2 pancakes per serving

375 Calories
9.4 g Fat
31.5 g Carbohydrates
25.2 g Protein

I top mine with natural almond butter and natural wild blueberry jam. YUMMY!

Turkey Meatloaf

Olive Oil

1 egg white

3 Tbsp tomato paste

1 Tbsp worcestershire sauce

1/2 tsp dijon mustard

1/2 tsp each dried marjoram, sage, thyme

Sea salt and black pepper to taste

1/2 c oat bran

1/2 c green bell pepper, chopped

2 Tbsp sundried tomato, chopped fine

1 small onion, chopped fine

1 small garlic clove, chopped

1 lb. extra lean ground turkey breast

1. Preheat oven to 375*F, prepare an 11"x7" loaf pan by coating lightly with olive oil.

2. Mix egg white, tomato paste, worcestershire sauce and mustard. Add all seasonings and mix well, add remaining ingredients and with clean bare hands mix well.

3. Place mixture in loaf pan and press down to remove air pockets. Smooth top of loaf down with hands.

4. Bake uncovered for 1 hour or until juices run clear and top is golden brown.

Calories per serving: 200, total fats: 2 g, saturated fat: 0 g; cholesterol: 55 mg; sodium: 190 mg; Carbs: 15 g; Fiber: 3 g; Sugars 4 g; Protein 33 g; Iron: 2 mg
