Things are coming together...quickly!

Its really coming together. I'm so anxious, excited, nervous, scared, thrilled...the list of emotions goes on and on.

I've spent the last year setting goals, reaching them, setting new goals and just working hard on my health and fitness. Now in the last three weeks before competition I feel like everything is happening so fast! I don't know if I'll ever feel ready!

Have you tried out to pro tan yet? Are you building up a bit of a base before so you aren't super orange? ;-)

Blythe is going to help me out with the pro tan. She thinks I'll only need one coat then a touch up the morning of the show. I've got a pretty good base tan already, so hopefully I won't look too orange!

Recipes

Oatmeal Pancakes

4 Eggs
2c Old Fashioned Oatmeal (dry)
1 16 oz container of No Salt Added Cottage Cheese

Mix all ingredients in a blender
Pour onto griddle and cook like regular pancakes, browing each side until cooked all the way through

Makes 8 pancakes.
2 pancakes per serving

375 Calories
9.4 g Fat
31.5 g Carbohydrates
25.2 g Protein

I top mine with natural almond butter and natural wild blueberry jam. YUMMY!

Turkey Meatloaf

Olive Oil

1 egg white

3 Tbsp tomato paste

1 Tbsp worcestershire sauce

1/2 tsp dijon mustard

1/2 tsp each dried marjoram, sage, thyme

Sea salt and black pepper to taste

1/2 c oat bran

1/2 c green bell pepper, chopped

2 Tbsp sundried tomato, chopped fine

1 small onion, chopped fine

1 small garlic clove, chopped

1 lb. extra lean ground turkey breast

1. Preheat oven to 375*F, prepare an 11"x7" loaf pan by coating lightly with olive oil.

2. Mix egg white, tomato paste, worcestershire sauce and mustard. Add all seasonings and mix well, add remaining ingredients and with clean bare hands mix well.

3. Place mixture in loaf pan and press down to remove air pockets. Smooth top of loaf down with hands.

4. Bake uncovered for 1 hour or until juices run clear and top is golden brown.

Calories per serving: 200, total fats: 2 g, saturated fat: 0 g; cholesterol: 55 mg; sodium: 190 mg; Carbs: 15 g; Fiber: 3 g; Sugars 4 g; Protein 33 g; Iron: 2 mg
